Ingredients (for 3-4 servings):
600g raw shrimp, peeled and deveined;
200g fresh spinach;
200g cherry tomatoes;
2 tbsp olive oil;
2 garlic cloves, finely chopped;
200ml cream;
100ml milk or stock;
60g freshly grated Parmesan
cheese; 1 tsp sweet paprika;
1/2 tsp dried oregano or Italian herbs;
salt and black pepper to taste;
Optional: a pinch of chili or cayenne pepper.
Preparation:
First, preheat the oven to 190°C (375°F). Lightly grease a medium-sized baking dish.
Rinse the shrimp under cold water, pat dry, and season with a little salt, pepper, and paprika. Heat the olive oil in a large skillet and sauté the shrimp over medium heat for about 1 minute on each side, until lightly browned. Remove from the skillet and set aside.
In the same skillet, gently sauté the garlic until translucent, being careful not to let it brown. Pour in the cream and milk or broth, stir well, and bring to a simmer. Stir in the Parmesan cheese and let the sauce simmer gently for a few minutes until slightly thickened. Season to taste with salt, pepper, oregano, and chili flakes, if desired.
